Well In this I have tried to make the best authentic Punjabi Chole Masala which usually served with Bhature in a very easy way.
Must try Chole recipe if you love to eat street side Chole Bhature.
Preparation Time :- 60 minutes
Servings :- 6 to 8
Ingredients:-
- Kabuli chana - 250 grams soaked overnight
- Tea- 2 tsp
- Cinnamon - 1 inch
- Black cardamom-2
- Green cardamom-4
- cloves- 4
- Javitri - 2-3
- Onion -3
- Tomatoes -3
- garlic - 10 -12
- ginger- 1 1/2 inch
- chole masala- 2 tsp
- Coriander powder- 1 tsp
- Red chilly powder- 1/2 tsp
- Turmeric powder- 1/2 tsp
- Anardana powder- 1 tsp
- Garam masala Powder- 1 tsp
- Salt to taste
- Oil- 3 tbsp
- For Tadka:-
- Ghee - 1 tbsp
- Asafoetida - 1/4 tsp
- Green Chilly - 2
- Ginger - 1 inch cut into juliens
Method:-
- First make a potli of tea ,cinamon, cardamoms ,cloves and javitri.
- In a pressure cooker add soaked kabuli chana , spice potli, salt and 3 cups of water.
- Cook the chana till 5 whistles.
- After 5 whistles, turn off the flame and let the pressure come down naturally.
- In a pan heat oil, add cumin seeds, and chopped onion and cook the onion till golden brown.
- now add tomato ginger garlic paste, salt and dry spices except garam masala.
- Cook the masalas on medium flame till oil starts oozing out.
- Add Boiled chana and its water , mix well .
- Cover the lid and cook for 8 to 10 minutes over medium flame.
- Open the lid and mix and add garam masala powder and cook for another 2 to 3 minutes.
- Add green coriander leaves and mix well.
- Turn off the flame and transfer it into serving bowl.
- In a tadka pan add ghee , hing , chilly and ginger cook for a minute and pour the tadka over chole.
- Your yummy Chole is ready to serve.
