Nutritious Mix Veg Recipe | How to Make Mix Veg Indian Style / Easy Mix Veg Recipe by Cook with Seema

Mix veg is a very nutritious sabji inch which many veggies are cooked together.
Its very Healthy and colourful Sabji.
In this recipe I have used broccoli, carrot, capsicum. peas and potatoes . You can add another vegetables too.




Preparation Time:-40 minutes
Servings :-4 to 5
Ingredients:-
Broccoli - 1 small (250) grams
Capsicum -2 small
Carrot - 1 cup
Peas- 1 cup
Potato - 2 medium size
Onion - 2 medium size
Tomato - 2 medium size
Garlic - 8 -10 cloves chopped,
Ginger- 1 inch chopped
green chilly - 1 chopped
Fresh coriander leaves- 2 tbsp chopped
Cumin seeds- 1 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 1 tsp
Kashmiri red chilly powder- 1 tsp
Salt - to taste
Garam masala powder- 1/2 tsp
Oil - 2 tbsp
Method:-
Heat a pan with 2 tbsp of oil.
Add cumin seeds and let it splutter, add chopped garlic and green chilly.
Now add chopped onion and cook for 2 minutes.
Now add chopped potatoes and cook for another 2 minutes.
Now add carrot and peas and fry another 2 minutes.
Add ginger and tomatoes, salt, turmeric powder, coriander powder,chilly powder , mix well cover and cook for 5 minutes on medium flame.
Open the lid and give it a mix.
After 5 minutes tomatoes becomes soft so mash it with spatula.
Now add blanched broccoli and capsicum.
Mix well, cover and cook for 3 to 4 minutes.
After 4 minutes open the lid mix and add garam masala powder and coriander leaves.
Mix, cover and cook for another 2 to 3 minutes.
After 3 minutes open the lid and cook for another 2 minutes in open.
Your yummy mix veg is ready.
Serve hot with roti, puri or paratha.
