Sambhar Recipe / How to make Sambhar / Easy and Quick Recipe of Sambhar

Sambhar is a SouthIndian curry in which Tur dal is cooked along with vegetables and spices.

It is commonly served with Idli, Vada, Dosa, Uttapam also enjoyed with plain rice.
Sambhar and rice is favourite lunch or dinner option in south region.

In this recipe I am using brinjal, carrot, beans, drumstick, onion and tomato , you can take any vegetable according to taste and availability.





Preparation time :- 40 minutes
Servings :- 6
Ingredients:-


  • Tur dal - 1 cup or 200 grams
  • Brinjal- 1/2 cup cut into cubes
  • Beans - 1/2 cups
  • Drumstick - 1 cut into 1 and half inches
  • Onion -1 chopped
  • Tomato- 2 chopped 
  • Ginger garlic - 1 tbsp grated
  • Tamerind pulp - 2 tbsp
  • Red chilly powder - 1/2 tsp
  • Turmeric powder- 1/2 tsp
  • Sambhar masala- 2 tbsp
  • Urad dal- 1 tsp 
  • Mustard Seeds - 1 tsp
  • Red chilly -2
  • Curry leaves- 10 -12
  • Oil or ghee - 2 tbsp


Method -




  • First wash tur dal and put it into Pressure cooker. 
  • Now add turmeric powder and salt. Add 4 to 5 cups of water.
  • Close the lid and switch on the flame.
  • After first whistle , turn off the flame , open the lid and add all the vegetables and ginger garlic.
  • Again close the lid and turn off the flame after one whistle.
  • Let the pressure comes down naturally.
  • Now take a pan add 2 tbsp of ghee or oil.
  • Add mustard seeds and urad dal and let the mustard seeds splutter.
  • Add red chilly and curry leaves .
  • Now add tamarind pulp and chilly powder and sambhar masala.
  • Add little water and fry it for 2 minutes.
  • Now add pressure cooked dal and vegetables.
  • Let it boil for another 3 to 4 minutes.
  • Turn off the flame. your delicious Sambhar is ready.
  • Serve hot with Idly, vada, dosa or simply plain rice.

Fresh Methi and gramflour Mathri - an Indian Snack Recipe / Mildly Spiced Teatime Snack Recipe

Mathri is favourite Indian snack recipe served along with evening tea and also on special occasions served along with sweets.

Here I am using Fresh methi (fenugreek ) leaves along with besan (gram flour) and rice flour.







Preparation time:- 40 minutes

Ingredients:-

  • Besan - 1 cup
  • Rice flour - 1/2 cup
  • Ghee or oil - 1/4 cup
  • Fresh methi leaves - 1/2 cup (chopped)
  • Carom seeds - 1 tbsp
  • Salt - to taste
  • Chilly flakes -1 tsp


Method:-





  • In a bowl take besan, rice flour and ghee and mix well.
  • Now add chopped methi leaves, carom seeds, salt and chilly flakes.
  • Mix well and form a stiff dough by using little water at a time.
  • Now take a small portion of dough and make a small circular mathri by rolling the dough balls between your palms.
  • Ready all the mathris like this.
  • Now heat oil in kadhai over medium flame.
  • Place mathris one by one carefully in hot oil.
  • Fry from both sides till light golden by flipping sides.
  • Takeout from oil and place it on kitchen towel.
  • Let it cool and store it in airtight container.
  • Consume within a week.

Besan ke Laddo / How to make Besan ke Laddo / Indian Sweet Recipe / Festive Laddo

Besan ke Laddo is a very popular Indian sweet often made on auspicious occasions. The Festive season is about to begin so thought about sharing this very popular sweet recipe.

Here I am going to make laddoes using regular besan or gram flour.


Preparation Time :- 40 minutes
Servings -6-8
Ingredients:-

  • Besan or gram flour - 250 grams
  • Ghee - 2oo grams
  • Sugar -500 grams coarsely powdered
  • Cardamom powder - 1 tsp
  • Almonds as required for garnish


Method-



  • Heat a pan over medium flame.
  • Add ghee on it let it become slight hot.
  • Now add besan and mix well.
  • Roast this besan and ghee mixture on low flame till aroma releases from the besan and it tuns golden.
  • Keep stirring continuously otherwise it will burn.
  • Keep the flame low throughout the whole process.
  • After 15 minutes of roasting the besan on low flame nice aroma starts coming.
  • Now add a tablespoon of water in the besan and keep on stirring till bubbles sets down.
  • This process will take 3 to 4 minutes. 
  • Now our besan mixture is ready.
  • Turn off the flame and transfer the mixture into another container.
  • Add cardamom powder and mix well.
  • Let it cool . 
  • Now add sugar , mix well.
  • Now take small mixture out off it and shape it into laddoes.
  • Your tasty Besan Laddo is ready.
  • Store it in airtight container and consume it till 3 to 4 weeks.
